Mr. Miura, one of rural-urban migration from Aichi-ken, had started up a company of persimmon from processing to promotion. It’s the good season to harvest persimmons of his fields now. This is the first harvest in there. He works from pruning to shipment with local people. He wants the works of “Tsurushigaki” for the cornerstone of maintenance forests and local revitalization. And he thinks that works and interacts during the work camp will be one of the opportunities for them. He plans to spend nights with participants. <What is Tsurushigaki>
Persimmons have been popular to us so long time in Japan. You can know how popular persimmons are as the prover says. Have you ever heard the prover “Momokuri-sannen, Kaki-hachinen (It often takes time to bear the fruit of one’s actions, planted peach and chestnut seeds take three years to bear fruit, persimmons take eight.)”?
We have two kinds of persimmons, “Ama-gaki” and “Shibu-gaki”, in Japan. You can eat “Ama-gaki” straight as it is. But “Shibu-gaki” are too astringent to eat as it is. Wild species of persimmons are “Shibu-gaki” species. “Ama-gaki” which is present in only Japan is mutation of “Shibu-gaki”.
Ancient people thought hard how to process “Shibu-gaki” to eatable. One of the ways is “Tsurushigaki” as a way of Imajyou. But Imajyou is different from other dried persimmons because of smoking. Smoking dry bring out the taste more deeply.
